Write a report (at least 1,000 words) on your experience with the ethnic restaurant and food following the instructions below:
Please state the name and location of the restaurant and what type of ethnic food they serve.
Preliminary Investigation (200 words min.): Clearly state why you chose this style of ethnic food. How did you find this restaurant? Why did you choose this restaurant, what type of research did you do and how did it impact your decision? Your thoughts and opinions on the ethnic food prior to the visit. Feel free to make connections with the knowledge you glean from the textbook, online websites, social media sites, etc. What is the cultural heritage of the restaurant’s menu?
On-site Field Notes (400 words min): Make observations about your entire experience. What, if anything, is interesting and different to you? (Decor, ambiance, smells, the protocol of service, music, wait staff communication, etc.) You must order at least one appetizer and one main course item. Include notes you make regarding the tasting, observing, and analyzing of the authentic ethnic food. Please include the history of the food items you ordered. Describe if this food item is authentic (compared to your research) or not. If not, what was changed? Contrast and compare the dishes you experience with other ethnic cuisines you may have tried.
Photographs and a Receipt (3-4 photos min): Take relevant photos of your dining and cultural experience (food, decor, etc.) and embed them into the report. Provide a caption for the photos so the reader has context in relation to the entire report. Don’t forget to provide a picture of the receipt for proof of your visit/order.
Brief Interview w/ Chef/Owner/Manager (200 words min): Before you arrive at the restaurant, develop a list of questions that will help you learn from your cultural experience. The questions can be for either the owner, chef, or manager of the establishment. Avoid interviewing the wait staff. Your goal is to speak with the creator of the culinary concept. Of course, if the restaurant is too busy at the time you visit, follow up with a phone call, a second visit, or an email. You are responsible forincluding this in your paper, so make sure you collect this narrative at some point. Two to three questions should suffice for the requirements of this assignment (but ask more if you want to). For example, you may want to ask, “How are your restaurant’s recipes connected to authentic Peruvian cuisine (or other)?” “What inspired you to create and serve this ethnic menu in the US?”, “Why does this menu item exist on the menu?”’ “What is the ethnic relevance of this menu item?”, “Has the recipe been altered from its authentic form, if applicable?”
Conclusions (200 words min): What are your thoughts on your overall learning experience? Did anything surprise you? Would you eat at this restaurant again or try other similar places? How do your on-site field notes and opinions compare with your preliminary investigation? How has your overall opinion of this cuisine changed from this experience? Discuss and Reflect.
